I have a start-up selling fried then baked in coconut oil sweet potato and taro chips.

We are looking to launch a new type of kale chip and need consulting expertise regarding food packaging options for our product. One vendor of food packaging equipment, after seeing the product, described it as the "product from hell." think of a doritos chip (with the size varying from half the size to double the size). Now make the chips highly irregular in 3d shape with folds and protrusions. The chips are quite fragile and yet we want to keep the pieces as big as possible. The product comes from a dehydrator where the chips are stuck to the tray and these must be removed manually so as not to minimize breaking the chips apart. (there are lots of crumbles because of the overall process). After this manual part, this is where we want to mechanize the packaging as much as we can. We are leaning towards stand up pouches with nitrogen fill, but are always open to suggestions. At about 50-100g per pouch it's about the size of the small potato chip bags.
===>we are interested in understanding what options for packaging machines we should be considering: 1) since we are a startup, lower cost machines in the near term that can handle, roughly 100+pouches/hour, 2) in the longer run, we probably need machines able to handle 1000+ pouches/hour. opening food packaging is a seemingly simple task. Not so for the elderly, disabled or those who suffer from arthritis.
This concern formed the basis of a kamo high school student-led investigation with whangarei mp dr shane reti, who is the parliamentary facilitator for arthritis new zealand.
The students, who acknowledged the importance of their study given our ageing population, measured the tear force needed to open a range of packaging using a device designed by busck prestressed concrete's rodney white.
They found food packing which is easy to open tears at a force of three newtons. They will be taking their findings to the industry to see whether they can find workable solutions.
Reti says the manufacturing industry is interested.
