Plantain Chips Manufacturing
i'm in the processing of signing with a commercial kitchen in the maryland area to begin production of my own line of plantain chips. I already have the recipe and have sourced a supplier for the bags to be used (either pet+aluminium+pe or pet+vmpet+pe).
What i need help now is for a food scientist that will assist me in going over the process:
1. Preservation and shelf life
- advise on the best possible method for extending the shelf life. I've read up on nitrogen flushing for chips but need someone who understand the technicalities to help document the process.
2. Nutritional label
- help come up with nutritional label that is in compliance with fda
3. Advise on how to secure necessary halal, kosher and possible organic approvals.
4. Additional production assistance and consulting.
I'll be using a commercial kitchen so this is a small scale operation. The process is pretty much manual - we cut the potatoes / plantains, fry them in a big kettle, drain the excess oil and make sure chips are not wet with oil, scoop them into individual bags (made out of pet+aluminium/foil+pe or pet+vmpet+pe material) and then manually insert each indivdual bag into a band sealer. The band sealer will flush/fill the bag with nitrogen (hopefully to extend the shelf life) and seal - and time/date stamp.
