We are currently working on a project on creamer in commercial food applications (instant beverages mixes - tea & coffee and savouries). We are specifically looking at insights from european and north american region and are looking for experts who can help us with below questions.
1. Creamer finds its application in various food and beverage application. If we understand correctly based on the ingredients, there are majorly two types of creamers - dairy and non-dairy creamers. From a functionality point of view, what is the basic difference between dairy and non-dairy creamer? How do we decide which type of creamer i.E. Dairy or non-diary creamer should be used in certain applications?
2. In creamer, the main ingredients are fat component, carrier, and protein component. How do we select a particular fat component/protein component/carrier for a creamer? What is being widely used in industry?
3. We understand that industry is moving from animal derivatives to plant derivatives, what kind of associated trends or alternatives do you see in creamers with respect to its ingredients?
