Description: looking to engage a food scientist to help evaluate and validate the processes required for a proof of principle. Expert needs to: i. Evaluate various baking technology, including co-extrusion, to determine best/most viable methods of creating artisanal style bread that can maintain common “artesian” sensory cues over an average 14 day shelf life. Ii. Determine feasibility and methodology of maintaining mouth feel, taste and texture of fresh bread through innovative baking processes/technology iii.
