We are seeking expert consultation for my client who is a regional retail grocery store chain in texas. They presently prepare an assortment of ready to eat meals, sides, entrees, fresh breads, meats and foods as well as uncooked/seasoned take home and cook/reheat food and meat products at each of their stores. Hi, i have a small meat company in dallas, tx that produces biltong (south african beef jerkey, but cured instead of dehydrated.) we have received great ratings and feedback and now are looking to get our product into stores- but have run into a potential obstacle, that perhaps your company can assist with: the shelf life of biltong is very limited- maybe two weeks at most. I was told that you cannot vacuum pack biltong, that it will just congeal into a mess of meat and fat. Biltong, although it dries, is more a fresh meat product much like cold meat, hams etc. However, i suspect that, with the innovations today, it may be possible and i am looking for a solution. I was wondering if your company has experts or consultants in vacuum sealing and packaging that may be able to advise me about the best type of packaging to get it into stores.
